Bits ‘O Brickle Cookies

I wish I could claim this recipe was mine. To be honest, I’m not even particularly fond of these cookies, but they are my husband’s absolute favorite. So when he asks really nicely, or it’s his birthday, or I just want to do something nice for him, this is what I bake. Technically, Hershey’s calls them Brickle Drop Cookies, and even publishes the recipe on the back of the Heath Bits ‘O Brickle bag, but my hubby asks for Bits ‘O Brickle, so that’s what we call them at our house.

The recipe is super easy, makes several dozen, and is can be mixed ahead then frozen to be baked  whenever.

Bits ‘O Brickle Cookies

Ingredients
8 oz (2 sticks) butter (soft)
1 cup granulated sugar
1 cup packed light brown sugar
1 tsp vanilla
1/2 tsp salt
3 eggs
3-1/2 cups all-purpose flour
2 tsp baking soda
2 tsp cream of tartar
1 bag (8 oz. pkg.) HEATH BITS ‘O BRICKLE Toffee Bits

Preheat oven to 375°F. Line several cookie sheets with parchment paper.

Beat butter, granulated sugar, brown sugar, vanilla and salt in large bowl until blended. Add eggs; beat well. Stir together flour, baking soda and cream of tartar; gradually add to butter mixture, beating until blended. Stir in toffee bits. Drop 1 tbsp of batter for each cookie  onto prepared cookie sheet.

Bake 8 to 10 minutes or until lightly browned. Cool slightly; remove to wire rack. Cool completely. Makes about 6 dozen cookies.

**Hershey’s original recipe says 350 for 8-10 minutes, with each cookie a heaping tsp of dough. That gave me underbaked cookies.
